CHOCOLATE MOUSSE

Do you loooove chocolate? If your answer is yes, that this dessert is perfect for you! Vegan chocolate mousse is a delicious and fluffy dessert with no added white sugar and has a lot of protein because it is made of silken tofu. It is also gluten-free.

Recipe

preparation time: 25 minutes

cooling time: 6 hours or overnight


Ingredients (for 6 glasses):

- 275g (1 2/3 cups) of vegan chocolate

- the liquid from one can of chickpeas

- 400g of silken tofu

- 1 tbsp of vanilla extract

- 1 tsp of vanilla paste

- 1 tbsp of maple syrup

- 1 tsp of white vinegar

- 0,5 tsp of salt


Method:

1. Melt the chocolate in a hot water bath.


2. When the chocolate is melted, start to whip aquafaba (chickpea water). Mix with a kitchen robot or mixer for at least 9 minutes. When aquafaba starts to harden, add 1 ts of white vinegar.


3. When aquafaba is done, pour the melted chocolate into a blender. Add silken tofu, vanilla extract, vanilla paste, maple syrup, and salt.

Blend for around half a minute, scrape down the sides and mix again.


4. Add one tablespoon of chocolate mixture to the aquafaba, use a spatula to mix. You have to be very careful when mixing the chocolate with aquafaba! Always mix from the edges to the center, like you are folding it. Always add one tablespoon at a time. When you add all of the chocolate mixture, start to fill the glasses.


5. If you are making it for two, slip the recipe, otherwise, you get around 4 bigger portions and 6 smaller ones.


6. Cool down in the fridge for at least 6 hours, better to leave it overnight.
