VEGETABLES WITH RICE - ASIAN WAY

Sautéed green beans, broccoli, carrots, and cabbage with coconut milk, and curry.

Recipe
Ingredients (for 4 persons):
▫️250 g of rice
▫️2 tbsp of coconut oil
▫️2 onions
▫️2 garlic cloves
▫️1 leek
▫️ vegetables you have at home: 2 carrots, handful of cabbage, broccoli, green beans, peas (each a handful)
▫️200 ml of rice milk
▫️200 ml of full-fat coconut milk
▫️2 tsp of salt
▫️2 tsp of curry
▫️1 tsp of garlic powder
▫️1 tsp of onion powder
▫️0,5 tsp of turmeric
▫️0,5 tsp of powdered paprika
▫️0,25 tsp of chili flakes
▫️parsley
▫️chives
Method: 👉🏼Cook the rice. 👉🏼Melt the coconut oil in a wok pan and fry the onions and leek. Add a pinch of salt and add minced garlic. 👉🏼Add all the vegetables and sauté them over medium heat for 15 minutes. 👉🏼Add all the spices and salt, pour in coconut and rice milk, mix well and wait until it boils. Then put out the fire. 👉🏼Serve with boiled rice and sprinkle with freshly chopped parsley and chives.
