PITTA BREAD FALAFEL

Falafel is a chickpea patty made with herbs and originates from the Middle East. Here you will find a recipe to make them and use them in tortillas, pitta bread, salads ... and many more!


Recipe

Ingredients (for 4 persons):

- 4 pitta bread


- 200g of dry chickpeas

- 0,5 tsp of baking soda

- handful of parsley

- 1 onion

- 3 garlic cloves

- 1 tsp of ground cumin

- 0,5 tsp of cardamom

- 1 tsp of salt

- 0,25 tsp of pepper

- 0,25 tsp of ground coriander seeds

- 2 tbsp of sesame seeds

- 0,25 tsp of cayenne pepper

- 0,5 tsp of powdered paprika

- breadcrumbs

- oil


- hummus (recipe)

- tahini sauce

- lettuce

- tomato

- sour turnip or pickles

- parsley

- vegan mayonnaise


Method:

1. The night before, soak the chickpeas in water and baking soda. The chickpeas should be covered with water by 2-3 inches, as they will triple in size.


2. The next day, drain and rinse the chickpeas. Add them to the food processor or blender. Also add chopped onion, chopped garlic, garlic, cumin, cardamom, salt, pepper, cayenne pepper, ground coriander seeds, powdered paprika, and sesame seeds.


3. Start to blend the ingredients for around a minute. Use a spatula to scrape the sides. The final texture shouldn’t be too smooth.


4. Use the breadcrumbs to form medium-sized balls. There is enough mixture to make 18 falafels. Place falafels in the fridge and leave them to rest for at least an hour or overnight.


5. Take them out of the fridge and fry them. If you want to fry them in a fryer, heat it and fry the falafels for about 2 minutes, or until they become golden brown. If you bake them in oil, heat the oil in the pan (so that 3/4 of the falafels are covered) and fry them for 3-4 minutes or until they become golden brown. If you want to bake them in the oven, oil the baking tray a little, and bake them at 200℃ (390℉) for 25-30 minutes, flip them halfway through the baking. Bake until they become golden-brown.


6. Fried or baked falafels can be eaten in a tortilla or pitta bread. I made them in pitta bread. Cut the bread lengthwise and spread hummus on both sides. Put in lettuce, tomatoes, and sour turnip on the bottom side. Add 4 falafels in each pitta bread or tortilla, pour-over tahini sauce, vegan mayonnaise, and sprinkle with parsley.
