CAULIFLOWER AND TOFU CURRY

You can make many variations of curries. I have already posted chickpea and lentil curry. Today, I am sharing cauliflower and tofu curry. It is extremely delicious and nutritious.
Cauliflower is a great source of vitamins C, K, B6, and minerals. It is also a great source of fiber, which is important for digestive health (1).

Recipe
preparation and cooking time: 40 minutes
Ingredients (for 4 persons):
300g of rice (brown/basmati)
400g of cauliflower
200g of tofu
400ml of water
300ml of tomato sauce
1 tbs of tomato extract
3 tbsp of coconut milk
1 tsp of salt
2 tsp of coconut oil
1 onion
2 garlic cloves
1 tsp of ginger
2 tbsp of curry powder
2 tsp of turmeric
1 ts of powdered paprika
1 tsp of soy sauce
parsley
sesame seeds
lemon juice
Method:
1. Cook the rice.
2. Wash and cut cauliflower into smaller florets. Cut tofu into smaller cubes.
3. Sauté the chopped onion on coconut oil. Add minced garlic and ginger. Wait until the garlic starts to get a brown color, then add curry powder and turmeric. Mix and sauté for a minute.
4. Add coconut milk, soy sauce. Cook for 2-3 minutes on medium heat.
5. Add tomato extract, powdered paprika, cauliflower, water, and tomato sauce. Cook on medium heat for 25 minutes or until the cauliflower is cooked.
6. When the cauliflower is cooked, add 1 tsp of salt and tofu. Mix and cook for another 5-10 minutes.

7. Add more salt or other spices if needed.
8. Serve with cooked rice, sprinkle with parsley, sesame seeds, and lemon juice.
