CHICKPEA CURRY WITH RICE

Chickpea curry is one of my favorite recipes.

Recipe

Ingredients: ▫️1 onion ▫️3 garlic cloves ▫️3 cm of fresh ginger (chopped) ▫️2 tbsp of curry ▫️0,25 tsp of cumin ▫️0,5 tsp of turmeric ▫️1 tsp of salt ▫️250 ml of tomato sauce ▫️100 ml of water ▫️100 ml of coconut milk ▫️2 cans of chickpeas ▫️2 tsp of mustard seeds ▫️1 tbsp of coconut oil

Method: 👉🏼Chop the onion and sauté it on the coconut oil. Add chopped garlic and ginger. Sauté for 2 minutes and add all of the listed spices.

👉🏼After 2-3 minutes pour in the tomato sauce, water, add drained chickpeas and mustard seeds. Stir well and wait for it to boil. Lower to medium heat for around 20 minutes. Stir a few times. 👉🏼Add coconut milk and add spices if needed. Bring to boil again. 👉🏼 Serve with rice and chopped parsley.
