VEGAN LASAGNA

Want to make lasagna but you don't know how to make it vegan? Today I'm sharing with you a recipe for vegan lasagna with soy chunks. It is super delicious! It may be the best vega lasagna you will ever try.

Recipe

preparation time: 40 minutes

baking time: 30 minutes


Ingredients (for 4 people):

- 500g of lasagne pasta

- 200g (4 cups) of soy chunks

- 2 onions

- 3 garlic cloves

- 1 tbsp of tomato extract

- 400ml of tomato sauce

- 600ml (3 cups) of water (1+2)

- 2 tsp of salt

- 2 tsp of powdered paprika

- 2 tsp of onion powder

- 2 tsp of garlic powder

- 8 tbsp of olive or coconut oil

- 500ml (2 ¼ cups) of plant-based milk

- 60g (1/4 cup) of flour

- 2 tsp of salt

- pinch of pepper

- vegan parmesan


Method:

1. Chop onions and garlic.


2. Pour 200 ml (1 cup) of boiling water over soya chunks. Mix and let it sit for a few minutes.


3. On 4 tbsp of oil sauté onion. Add garlic and soya chunks. Sauté on medium heat for 15 minutes. When it starts to stick to the bottom, add 200 ml (2 cups) of water.


4. After 15 minutes pour in 400 ml (2 cups) of tomato sauce, tomato extract, and spices. Mix well and cook for another 10 minutes.


Make the béchamel sauce:

5. Heat 4 tbsp of oil and add flour to it. Whisk constantly and when it starts to thicken, pour in plant-based milk gradually. Cook on medium heat and when it starts to thicken again, add salt and pepper.

Start to assemble the lasagna:

6. Pour a few ladles of béchamel into the baking tray to cover the bottom. Add a layer of lasagna pasta, add a layer of soy meat on top, and béchamel. Sprinkle with some vegan parmesan. Continue with a layer of lasagna pasta, soy meat, béchamel, vegan parmesan, a layer of lasagna pasta, and top it with the leftover béchamel.


7. Bake for 30 minutes at 200℃ (390℉).
