PASTA WITH HOMEGROWN VEGGIES

Easy and quick lunch with homegrown vegetables and pasta.

Recipe

Ingredients (for 4 persons):

▫️400 g of pasta

▫️Half of a leek

▫️2 handfuls of broccoli

▫️4 leaves of kale

▫️4 handfuls (or more) of cherry tomatoes

▫️Olive oil

▫️Salt

▫️Pepper

▫️0,5 tsp of powdered paprika

▫️2 tsp of garlic powder

▫️1 tsp of onion powder

▫️Chives

▫️Coconut yogurt

Method:

👉🏼Cook the pasta.

👉🏼Cut the leek and sauté it on olive oil with broccoli. Cook on medium heat for 10 minutes or until the broccoli is cooked. In between and a pinch of salt.

👉🏼Add sliced kale and cherry tomatoes. Add the garlic and onion powder, powdered paprika, and a pinch of pepper. Roast for 5 minutes and stir in between add salt if needed.

👉🏼Mix the pasta with the sauce and add chives.

👉🏼Serve with coconut yogurt on top.
