Quick, simple, and nutritious lunch made under 15 minutes.

If you are running out of time and still want to make healthy and nutritious lunch this recipe is for you.


RECIPE

Ingredients (for 4 persons):

- 400 g of pasta

- 1 can of chickpeas

- 2-3 handfuls of fresh basil

- 1 tbsp of pine nuts

- 4 tbsp of nutritional yeast

- 1,5 dl of plant-based milk

- 2 tbsp of vegan parmesan

- 1 tsp of onion powder

- 1 tsp of garlic powder

- 1 tsp of salt

- cherry tomatoes


Method:

- Cook pasta.

- Meanwhile make the sauce in a blender. Blend washed chickpeas, basil, pine nuts, nutritional yeast, plant-based milk, vegan parmesan, onion powder, garlic powder and salt until creamy and smooth.

- Pour the sauce over the cooked pasta and mix well.

- Serve with cherry tomatoes.
