TOMATO PESTO

When we hear about pesto, we all probably think of the green basil pesto, but it's not the only one. They are also made of arugula, dandelion, wild garlic, nettles, spinach, and also tomatoes. I made the one with tomatoes.


Recipe

Ingredients (for 4 persons): ▫️400g of pasta

▫️100g of sunflower seeds

▫️13 g of fresh basil ▫️2 tsp of garlic powder ▫️1 tbsp of lemon juice ▫️0,25 tsp of salt

▫️0,25 tsp of pepper

▫️110 g dried tomatoes (if they are soaked in oil, don’t add extra oil)

▫️100 ml of olive oil

▫️vegan cheese

Method: 👉🏼 Cook the pasta. 👉🏼 Blend the oil, seeds, tomatoes, basil, garlic powder, lemon juice, salt, and pepper. Blend until a smooth paste is formed. If necessary, add more oil. 👉🏼 When pasta is cooked immediately mix it with pesto. 👉🏼Sprinkle with vegan cheese.
