TOFU AND CHICKPEAS SALAD

Protein-rich salad for the days when you don't feel like spending much time in the kitchen. Besides tofu and chickpeas, this one also has quinoa, beans, carrots, and tomatoes in it.


Recipe
Ingredients (for 4 persons): ▫️ large bowl of lettuce
▫️ tomato ▫️4 grated carrots
▫️ half a can of kidney beans
▫️100 g of cooked quinoa
▫️400 g of smoked tofu
▫️3 tbsp of cornstarch
▫️2 tbsp of breadcrumbs
▫️1 can of chickpeas ▫️spices: salt, pepper, oregano, powdered paprika, garlic, and onion powder, turmeric
▫️oil
▫️vinegar ▫️3 tbsp coconut yogurt
Method: 👉🏼Cut the tofu into cubes and flour it in a bowl with cornstarch, breadcrumbs, 0,5 tsp of salt, and a pinch of pepper. Fry the tofu on 2 tbsp of oil until it becomes golden-brown. 👉🏼Cook the quinoa in 200 ml of water, add a pinch of salt. 👉🏼Mix rinsed chickpeas in a bowl with 2 tbsp of oil, 0,5 tsp of salt, a pinch of pepper, 0,5 tsp of turmeric, 1 tsp of garlic powder, 1 tsp of powdered paprika, 1 tsp of onion powder, 1 tsp of oregano. Mix well. Fry the chickpeas in a pan until golden brown. Do not cover the pan! 👉🏼Add grated carrots, kidney beans, cooked quinoa, baked tofu and chickpeas, and sliced tomatoes to the salad bowl. Mix well, add vinegar, olive oil, salt, and coconut yogurt.
