BAKED SWEET POTATOES

Baked sweet potatoes with guacamole, roasted chickpeas, and beans, cheery tomatoes, tahini dressing, and hummus. There are many different stuffings, but this one is by far my favorite. Let me know which stuffing is your favorite.

Recipe
total time: 45-50 minutes
preparation and cooking time: 30 minutes
baking time: 40 minutes
Ingredients (for 6 persons):
- 3 medium-sized sweet potatoes
- pinch of cumin and pepper
- 2 tbsp of oil
Roasted chickpeas:
- 2 cans of chickpeas
- 4 tbs of olive oil
- 1 tsp of powdered paprika
- 1 tsp of garlic powder
- 1 tsp of onion powder
- pinch of cumin
- pinch of curry
- 0,5 tsp of turmeric
- 0,5 tsp of salt
- pinch of cayenne pepper
- 1 tsp of oregano
- 0,5 tsp of dried basil
Guacamole:
- 2 avocados
- half of a small onion
- 1/6 of red bell pepper
- 5 tbsp of lemon juice
- 1 tbsp of parsley
- 0,5 tsp of salt
Tahini dressing:
- 2 tsp of tahini
- 2 tbsp of lemon juice
- 7 tbsp of water
- 0,5 tsp of garlic powder
- 0,25 tsp of salt
Other:
- Half can of brown beans
- cherry tomatoes
- vegan feta cheese
- hummus with truffles (or plain)
Method:
1. Heat the oven to 200℃ (390℉).
2. Wash potatoes and rub them with a rougher side of the dish-sponge. Peel or cut off any dirt. Cut off the edges. Take a fork and pierce through a potato a few times.
3. Then slice each potato in half. Put them on parchment paper and on the tray. Apply a few drops of oil on each and sprinkle with a pinch of cumin and pepper.

4. Bake for 20 minutes on the fan and 20 minutes on normal. If needed extend the baking time. Use a fork to check if they are done.
5. In the meantime rinse chickpeas under running water. Let it strain and then mix it with oil and spices (powdered paprika, onion powder, garlic powder, cumin, curry, turmeric, salt, cayenne pepper, oregano, basil).

6. Make guacamole. Mash 2 avocados, add finely sliced red bell pepper, onion, lemon juice, parsley, and salt.

7. Heat a pan and roast chickpeas on medium heat for about 15 minutes. Don't cover the pan. Mix in between.

8. Make tahini dressing. Mix together tahini, lemon juice, water, garlic powder, and salt. Mix well until you get the desired consistency.
9. Wash cherry tomatoes and cut them. Also, cut vegan feta cheese into small cubes.
10. Add rinsed beans to chickpeas. Mix a few times so that beans can roast a bit.

11. Take out baked potatoes and start to assemble the dish. Firstly, add guacamole on potato, then chickpeas and beans, then tomatoes and feta cheese. Pour over some tahini sauce and add some hummus on the side.
