MANGO AND MANDARIN PUDDING

This dessert is mouth-watering! It looks and tastes like a dessert from a top-notch restaurant. The good thing is that is easy to make! The base is made of graham crackers, vegan butter, and coconut yogurt, the middle layer is made of mango and mandarins, and the top is made of cashews and maple syrup. If you


want to impress someone, this dessert is a way to go!

Recipe

preparation time: 50 minutes

cooling time: 1 hour


Ingredients:

- 140g (1 ½ cups) of vegan biscuits (graham crackers)

- 75g (1/3 cup) of vegan butter

- 3 tbsp of coconut yogurt

- 1 mango

- 6 mandarins

- 100ml (1/2 cup) water

- 2g of agar powder

- 100g (2/3 cup) of cashews

- 0,5 tsp of vanilla extract

- 3 tbsp of maple syrup

- 50ml (1/3 cup) of plant-based milk


Method:

1. Soak cashews overnight or boil them for at least 20 minutes.


Bottom layer:

2. Grind biscuits or graham crackers. Add melted vegan butter and coconut yogurt. Mix until the mass becomes compact.


3. Split the mass into 6 parts and fill the serving glasses.


Middle layer:

4. Cut the mango and blend it. Pour it into a bowl.


5. Peel mandarins and blend them.


6. Mix mango and mandarins together.


7. Mix water and agar in a pan. Whisk constantly and bring it to a boil. Add agar to the fruit mixture gradually and whisk until the mixture starts to thicken.


8. Fill the glasses with the mixture.


Top layer:

9. Strain the cashews and add vanilla extract, plant-based milk, and maple syrup.

Blend everything together for 1 minute.


10. Add the cream on top of the dessert.


11. Store in the fridge and serve right from it.
