CURRY QUINOA WITH VEGETABLES

Do you use quinoa for your meals? I've been using it for many years and I always make sure it's on the menu every week 😋.

QUINOA

-Has a low glycemic index.

-Contains all 9 amino acids, it’s rich in protein, and does not contain gluten. 💪🏼

-It is a source of manganese, phosphorus, copper, folate, iron, magnesium, and zinc.

-Contains high levels of antioxidants. Ali pri kuhanju uporabljaš kvinojo? Jaz jo uporabljam že veliko let in vedno poskrbim, da je na jedilniku vsak teden😋.



Recipe

Ingredients (4 persons): ▫️️300 g quinoa

▫️600 ml of water

▫️1 grated zucchini ▫️3 grated large carrots ▫️1 leek ▫️100 g of broccoli ▫️1 tbsp of coconut oil ▫️0,5 tsp of curry ▫️0,5 tsp of turmeric ▫️0,5 tsp of cumin ▫️salt

▫️ pepper

Method: 👉🏼Wash quinoa with a sieve and pour over 600 ml of water. Bring to boil for 10 to 15 minutes. 👉🏼Sauté leek on coconut oil. Add carrots, broccoli, zucchini, and add a pinch of salt.

👉🏼 Sauté on medium heat for 5 minutes. Add curry, cumin, turmeric and pepper. 👉🏼 Add cooked quinoa and mix well. Leave on medium heat for a few more minutes, then serve hot.
