OVEN-BAKED VEGETABLES

There are times when you don't know what to make for lunch, dinner or maybe you are just lazy and don't have enough time to cook. Don't worry, that also happens to me. That's why I am sharing with you this easy, quick and on top of all, delicious recipe where all you will have to do is put every component in the oven. You can use any vegetables you have at home, I used zucchinis, onions, tomatoes, and chickpeas.
Let's get to work!

Recipe
Ingredients (for 4 persons):
▫️1,2 kilos of potatoes
▫️4 onions
▫️200 g of tofu
▫️1 can of chickpeas
▫️Marinara for chickpeas: 3 tbsp of olive oil, 0,5 tsp of salt, a pinch of pepper, 1 tsp of powdered paprika, 1 tsp of onion powder, 1 tsp of garlic powder, 0,5 tsp of turmeric, 1 tsp of oregano)
▫️The vegetables you have at home, I used 1 large zucchini and cherry tomatoes, you can also use broccoli, Brussels sprouts, cauliflower, carrot ...
▫️6 tbsp of olive oil
▫️Spices (2 tsp of powdered paprika, 2 tsp of onion powder and 2 tsp of garlic powder, a pinch of black pepper, 1,5 tsp of salt, 1 tsp of oregano; it is important that the spices cover the whole baking tray with potatoes and onions)
Sauce:
▫️100 g of cashews
▫️0,5 tbsp of tomato extract
▫️100 ml of water
▫️1 tsp of apple or rice vinegar
▫️1 tsp of salt
▫️1 tsp of garlic powder
▫️1 tbsp of tahini sauce
▫️2 tbsp of nutritional yeast
Method:
👉🏼You can soak the cashews the night before cooking, or you can boil them for at least 30 minutes.
👉🏼Preheat the oven to 200 ℃ (390℉).
👉🏼Peel the potatoes and cut them into smaller pieces. Cut the onions into quarters.
👉🏼Put the onions and potatoes on the baking paper. Pour 6 tbsp olive oil and spices (peppers, onions, garlic powder, salt, pepper, and oregano) on top of it.
👉🏼Bake at 200 ℃ (390℉) for 15 minutes.
👉🏼Meanwhile, cut the tofu, and all the vegetables.
👉🏼Rinse a can of chickpeas and marinate it in a small bowl (use oil, salt, pepper, pepper, garlic and onion powder, turmeric, and oregano).
👉🏼After 15 minutes, take the potatoes out of the oven and add the vegetables, tofu, and on top of all, the chickpeas. Mix the whole tray with a spoon or spatula and put it back in the oven and bake for another 20 minutes.
👉🏼Start making the sauce. Strain and rinse boiled cashews and blend them with 100 ml of water, tomato extract, vinegar, salt, garlic powder, tahini sauce, and nutritional yeast. If necessary, add water and salt.
👉🏼After 20 minutes, you can extend the baking by 10 minutes on the fan, depending on whether the potatoes are already baked (try it with a fork).
👉🏼Serve on a plate and pour over the sauce.
