GRATINATED PASTA WITH BUTTON MUSHROOMS

Gratinated pasta with button mushrooms, paprika, and tofu, with a sauce made of cashews and nutritional yeast. Great recipe for lunch or dinner!

Recipe

baking time: 10 minutes
Ingredients (for 4 persons):
- 500g of whole wheat pasta
- 150g of button mushrooms
- 1 onion
- half of a red paprika
- 200g of tofu
- 3 tbsp of olive oil
- 1 tbsp of soy sauce
- 200g (1 1/3 cups) of cashews
- 10g (1/3 cup) of nutritional yeast
- 250ml (1 cup) of plant-based milk
- 250ml (1 cup) of vegetable broth
- 1,5 tsp of powdered paprika
- 1,5 tsp of garlic powder
- 1,5 tsp of onion powder
- pinch of cayenne pepper
- 1 tsp of salt
- vega feta cheese
Method:
1. Preheat the oven to 200℃ (390℉).
2. Soak the cashews overnight or cook them for at least 20 minutes. Cook the pasta.
3. Meanwhile, chop the onion, wash, and slice the mushrooms and paprika. Press the tofu for a minimum of 5 minutes and slice it into stripes.
4. On oil sauté the onion and mushrooms on medium heat for 5 minutes. Add paprika and conutinue to sauté for 5 minutes. Add tofu and soy sauce.
5. Strain the cashews and add them to a food processor or blender. Add nutritional yeast, plant-based milk, vegetable broth, powdered paprika, onion and garlic powder, cayenne pepper, and salt. Blend until smooth and pour it into the sauce.
6. Mix well and add strained pasta.
7. Mix again and move it to a baking tray. You can add vegan feta cheese on top.
8. Bake for 10 minutes on 200℃ (390℉).
