POTATO AND TURNIP CASSEROLE

This casserole is perfect for lunch or dinner. It is made of potatoes and turnip, covered with onion and cashew sauce.

Recipe

preparation time: 35 minutes

baking time: 40 minutes


Ingredients:

- 1 kilo of potatoes

- 400g of turnip

- 4 onions

- 300ml (1 ½ cups) of plant-based milk

- 150g (1 cup of cashews

- 30g (1/2 cup) of nutritional yeast

- 2 tbsp of cornstarch

- 400ml (1 2/3 cups) of vegetable broth

- 1 tsp of salt

- 1 tsp of onion powder

- 1 tsp of garlic powder

- 2,5 tsp of powdered paprika

- vegan parmesan


Method:

1. Peel and slice potatoes and turnip. Slice onions.


2. Separately add turnip and potatoes to the salted boiling water and let it cook for 10 minutes. Strain them after 10 minutes.


3. Soak cashews over-night or cook them for min. 20 minutes. Strain them when they are cooked.


4. To make the sauce, blend together cashews, vegetable broth, plant-based milk, nutritional yeast, cornstarch, salt, onion and garlic powder, and powdered paprika. Blend for 1 minute.


5. Start to organize the layers of potatoes and turnip. Start with potatoes, then add one layer of turnip, then potatoes, turnip, and potatoes. Add onion on the top and pour over the sauce.


6. Bake for 40 minutes at 200℃ (390℉).


7. Serve with vegan parmesan.
