VEGAN APPLE STRUDEL

Today, on Apple Day, I am sharing with you a recipe for a juicy and delicious vegan apple strudel. This time I bought the vegan dough in the store, but if you want, you can make it at home by yourself. I'll do it next time. The stuffing contains apples (of course), otherwise, it wouldn't be apple strudel, vegan butter, coconut yogurt, and a mixture of special ingredients that will make strudel juicy and delicious.

Recipe
Ingredients (for three strudels):
▫️Store-bought vegan pulled dough (6 sheets, in a package I bought there were only 5 sheets, so I made two rolls with two layers and the third one with one.)
▫️1.2 kg of apples
▫️9 tbsp of coconut yogurt
▫️6 tbsp of vegan butter
▫️1 tsp of cinnamon
▫️450 ml of plant-based milk (I used rice milk)
▫️2 egg substitutes (I used Terra Vegane, Bio Megga Exx from the Vegansko.si)
▫️5 tbsp of breadcrumbs
▫️1 bag of vanilla sugar (1 tbsp)
▫️1 tsp of oil (olive, sunflower or coconut oil, but it should be melted)
▫️5 tbsp of sugar (granulated, cane or coconut sugar)
▫️1 bag of baking powder (1 tbsp)
▫️1 tbsp of rum
Method:
👉🏼Preheat the oven to 180 ℃. (350 ℉).
👉🏼Wash the apples and grate them. (If desired, you can peel them first.)

👉🏼In a bowl, mix 250 ml of vegetable milk, 2 eggs, breadcrumbs, vanilla sugar, oil, sugar, baking powder and rum. Mix well and leave it for a few minutes so that the breadcrumbs will soak in the liquid.

👉🏼If you made the dough yourself, divide it into three parts, if you bought it, place two layers of pulled dough on the work surface.

👉🏼Divide the grated apples into three parts and evenly put the first third on the dough.

👉🏼Stir the mixture of "secret ingredients" a use a small ladle to pour the third of it on to the apples.
👉🏼Spread two tablespoons of vegan butter over the dough.

👉🏼Do the same with three tablespoons of coconut yogurt.

👉🏼On top, sprinkle with a little of cinnamon (less than a third of a teaspoon), you can also add some extra breadcrumbs.

👉🏼Start to roll the dough to make a strudel.
👉🏼Carefully place it in a baking tray.
👉🏼Repeat the procedure two more times.

👉🏼Bake strudel in the oven for 40 minutes. Then take it out of the oven and pour 200 ml of plant-based milk over it and bake for another 10 minutes.

👉🏼When you take it out of the oven, cover it with a damp cloth and wait for it to cool down.
