VEGAN WALNUT ROLL

I made a vegan walnut roll for the first time. I have to admit, I was a little bit skeptical about making the dough because I replaced eggs with a plant-based alternative. I have to say, there was no need for any doubt. “Potica” as we call it in Slovenia, was absolutely delicious, and the dough rolled out like a "regular" dough.

Recipe

Ingredients:

Dough:

- 300 g (2 1/2 cup) of wheat flour

- 15 g of yeast

- 1 dl (0,4 cups) of plant-based milk

- 70 g (1/3 cup) sugar

- 50 g (1/4 cup) of vegan butter

- egg yolks alternative: 30 g (1/4 cup) of wheat flour, 120 ml (1/2 cup) of water, a pinch of salt, 1 tbsp of oil, and half a tsp of turmeric

- half a pinch of salt

- 2 tbsp of vanilla sugar

- 0,5 tbsp of coconut oil

- 1 tbsp coconut sour cream

Stuffing:

- 300 g of ground walnuts

- 160 ml of coconut cream

- 2 tbsp of sugar

- 1 tbsp of rum

- Aquafaba from one can of chickpeas

Method:

Stuffing

1. Pour heated coconut cream over walnuts and add sugar. Make aquafaba from the chickpeas water. Mix it for about 10 minutes, and then add it to the walnut and sugar mixture.

Dough

2. First, make sourdough: mix a tablespoon of flour, a little bit of plant-based milk, a tablespoon of sugar, and a pinch of salt in a cup. Put the mixture near a warm place (oven/stove/radiator) and wait until it starts to rise.

3. Substitute for egg yolks: mix water, salt, and flour and heat for 2 minutes in the microwave. In between of take out the cup 3-times and mix the mixture well. Add the oil and turmeric. Add extra oil if needed. The mixture should be sticky.

4. Make a dough out of all ingredients listed before (flour, sourdough, egg yolks substitute, plant-based milk, sugar, vegan butter, vanilla sugar, coconut oil, and coconut sour cream). Knead the dough well and add extra flour if needed. It shouldn’t be sticky.

5. Gently roll out the dough, spread the stuffing, roll it and between doing it, use a fork, and sting it along the length a few times. Split the roll according to the length of your baking tray. Before you move the walnut roll, grease the baking tray with vegan butter (you can also use coconut oil).

6. Cover the tray and let the walnut roll rise from 6 to 8 hours or overnight.

7. When the walnut roll rises, put it in a preheated oven and bake it from 40 to 50 minutes at 190°C (375℉). If the top is already brown during baking, cover it with aluminum foil.

8. When the walnut roll is finished, cover it with a wet cloth and leave it until it cools down.
